Auden's Kitchen: Biga quality without the “big-a” price

This rarely happens, but I loved Bruce Auden’s new Stone Oak eatery right away. And I mean from the minute I walked in the door. Maybe it was the baskets brimming with loaves of fresh bread on a table smack in the middle of the entrance. Or the dark utilitarian shelves ringing the restaurant, attractively displaying copper pots and ceramic crocks, bottles of wine and glassware. Or the lively open kitchen where a wood-fired oven glowed and waiters gathered while food was plated by Auden himself. But whatever the cause, in mere seconds I felt like I had just walked into my neighbor’s kitchen for dinner. Only this neighbor happens to be a five-time James Beard nominee and the owner and impresario of the upscale institution and anniversary destination, Biga on the Banks. I was literally in Auden’s Kitchen― which is the new restaurant’s name― and as restaurant names go, just about as perfect as it gets.

On my first visit, our group had 6 p.m. dinner reservations, as I had been warned by friends that showing up without them was a sure path to disappointment. This turned out to be sage advice, as the host told us that the house was fully booked from 7 p.m. on. We were shown to a comfortable booth just off the entrance, with a nice view of the dining room and the open kitchen. Had we known it was an option, we might have requested to sit at the stainless steel chef’s counter where cooks call the orders and finishing touches are applied to dishes. If you want to be part of the action, you can’t get any closer than that.

Price Range:

Perhaps the best value you’ll find on the Northside. The most expensive―and I use the term loosely― item on the menu is a $15.75 beef short rib plate that comes with two sides. Small plates and salads run $6 - $10, pizzas about $11 and dinners average $13. Kids’ menu items are $4.95. Dinner and appetizers for three (with enough left over for a take home bag) was just over $60.

Pros:

Owner/chef Bruce Auden is also the man behind Biga on the Banks, and he brings Biga service, Biga quality and standout Biga head chef Patricia Wenckus to this Northside dining destination. But this is no Biga clone—and that’s actually a good thing. Auden has created a comfortable, casual eatery where unfussy food shines. An open kitchen with seating right at the chef’s counter adds to the charm.

Cons:

It may be a casual eatery, but don’t expect to just drop in and be seated any time. Reservations are a necessity on weekend nights. And if you don’t like being “part of the action,” which could include being jostled by any of the yellow-t-shirt clad staff buzzing through the dining area, ask to be seated in a booth.

After perusing the looseleaf menu pages, we decided to start with an order of gnocchi ($6.75). Even if you’re not a fan of the little potato dumplings, this version will make you a believer. Served with pulled pork au jus, plus leafy green kale, it reminded us of home-style Sunday suppers in our youth. A wood roasted chicken thigh and leg ($12.50) was juicy with the right hint of smokiness, but the creamy skin-on mashers served as an accompaniment almost outshone it. The beer-battered fish and chips ($12.95) was another standout― crispy golden on the outside, tender cod goodness inside. (My husband did think the addition of sea salt would have made the dish even better.) A whole roasted trout served as a lunch special that I sampled on a later visit deserves special praise―stuffed with lemon slices and thyme and served with more of the garlicky kale and roast rosemary onion potatoes―it was just about the best use of $9.99 I can think of.

But sometimes it’s how the staff handles the missteps that are bound to occur in a restaurant, especially a new one, that are the most telling. When a pizza from the specials board arrived badly burnt on the bottom, our waitress was immediately apologetic, as was the manager she alerted, who made his way over to offer free desserts and remove the item from our bill―problem solved. At lunch a few days later, my pizza arrived perfectly done, with just the right amount of fresh, truffle-oil drizzled arugula piled on top.

The one food item that has made the trip from Biga with no tinkering is the sticky toffee pudding ($6). The little caramely pudding lazes in a pool of thin vanilla-laced custard. For those unfamiliar with the English classic (Auden is a London transplant) expect something more akin to a moist spice cake than Jello instant pudding. It looks small, but it packs richness into every spoonful, so plan on splitting it if you want to do more than laze about afterwards yourself.
